We used Arabica beans from Brazil, and here's the surprise: we managed to transform it in such a way that, from an initial score of 80 points, after the fermentation process, it was rated an impressive 87 points by the world-renowned taster Gabriel Céspedes, bringing it close to the category of the world's best coffees. The most striking features of its landscape are the 37 volcanos, several of them still being active. These volcanos are not only attractive for travelers to discover but also make up the distinct characters to be found in Guatemalan coffees. Antigua is one of the oldest coffee-growing regions in Guatemala and is famous for producing some of the best coffees in the world. This coffee from Finca Medina underwent black honey processing. First, the cherry skin (pulp) is removed and the coffee beans are left with their mucilage. Then they are slowly dried under shade and closely monitored until they reach the optimum moisture levels. The cooperative was founded in 2000 by 45 community-minded farmers. At the time, farmers were suffering rock-bottom coffee prices which made it unprofitable to harvest coffee. Among the better-known coffee-producing regions are Sumatra, Sulawesi, Java, but also smaller islands such as Bali and Flores. Approx. 92% of the coffee production is in the hands of small producers using traditional techniques such as the semi-washed processing technique called "giling basah". As a result of this semi-washed process, the beans shimmer bluish and only have little acidity. They tend to have a full body and strong, spicy notes such as earthiness, tobacco, and herbs. This is fostered through intense sun exposure during the day, while cold and moist winds cool down the area at night. Along with higher density comes a complex abundance of citric and fruitful aromas that let coffee from Huehuetenango rank as one of the best gourmet coffees in the world.
